Slow Cooker Mexican Chicken

This was super easy and yet surprisingly good.  It's also low-fat

Mexican Chicken

1 lb. boneless, skinless chicken breasts
1 tsp. Seasoning for Tacos
1 6-8 oz. can salsa verde
4 oz. cheddar cheese, shredded
3 green onions chopped
Assorted taco toppings.

Sprinkle the chicken on both sides with taco seasoning; grill or saute.  Cut the chicken into cubes and place in slow cooker.

Add the salsa; cook until chicken is tender,  Don't overcook.  Cooking times will vary depending on your slow cooker and how thoroughly cook the chicken.  I usually need only a couple of hours from start to finish on low.

To serve: Warm tortilla shells and line with chicken, cheese, green onions and assorted toppings.

This can also be baked in the oven.  Season chicken with Taco seasoning.  Grill or saute chicken until done.  Place in greased 8" x 8" baking dish; cover with salsa or green enchilada sauce.  Sprinkle cheese over the top and back in 350 degree oven for 10-20 minutes until hot and bubbly.
