Coconut Crunch Cookies

We like coconut at our house so today's Sunday cookie had a lot of coconut in it. The edges are crispy and the center is chewy

Coconut Crunch Cookies

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 tsp. vanilla
1 tsp. almond extract
2 cups all-purpose flour
1 tsp. baking soda
3/4 tsp. salt
2 cups flaked coconut
1 pkg. (11 1/2 oz) milk chocolate chips
1 1/2 cups finely chopped almonds (My son had fun chopping these in an old-fashioned nut chopper.)

In a large mixing bowl, cream butter and sugars together until light and fluffy.
Beat in eggs and extracts.  Mix well.
Combine flour, baking soda, and salt in separate bowl.  Gradually add to creamed mixture and mix well.
Stir in the coconut, chocolate chips and almonds.
Drop by teaspoonfuls 2 inches apart on ungreased baking sheets.
Bake for 9-11 minutes or until lightly browned.
Cool for 1 minute before removing from pans to wire racks.
Yield: 4 1/2 dozen (approximately)
