Pumpkin Cookies
Pumpkin Cookies
This recipe was given to me by our dear friend, Rosa. She got it from Caprial on her web site: www.caprialandjohnskitchen.com
1cup unsalted butter, melted
1 cup sugar
½ cup brown sugar
1/3 cup pumpkin puree
1 egg
1 tsp. vanilla extract
1 ¼ cup flour
2 cups old fashioned oats
½ cup toasted chopped pecans
½ cup chopped dried cherries (you can easily substitute raisins or another dried fruit.)
Heaping ½ tsp ground cinnamon
¼ tsp. ground nutmeg
½ tsp. salt
½ tsp. baking soda
Preheat oven to 350 degrees.
Place the butter, sugar, brown sugar and pumpkin puree in the bowl of a mixer.
Mix well.
Add the egg and vanilla and mix until smooth.
Add the flour, oats, pecans, cherries, spices, salt and baking soda and mix well.
Spoon onto a well greased cookie sheet pan and cook until golden brown about 10 minutes.
Let cool about 3-5 minutes then remove from the pan.
Eat or store in an airtight container.
