Leaner Burgers and Fries

The original recipe came from a recent issue of Country Living magazine.  Of course, I had to make a few modifications so a slightly different recipe appears here.  Don't be afraid to modify it on your own.  It can make cooking more fun!  We enjoyed these for Sunday dinner.


Leaner Burgers and Fries

2 1/2 lbs. sirloin steak 

(I ground the sirloin with my special Kitchen Aide Mixer attachment to make a very lean hamburger, trimming off a lot of the fat.  My resident carnivore prefers a fattier burger but I loved how lean this made my ground beef.  I doubled the batch, made 9 patties and froze 4.  If you want about 4 to 5 patties use 1 lb. 90% lean ground beef and 1/2 lb. lean ground turkey, white meat only.)

2 Tbsp. tomato paste
1 Tbsp. Worcestershire sauce
Sea salt and freshly ground pepper.


Oven Fries

4 to 5 medium-size Yukon gold potatoes
2 Tbsp. extra virgin olive oil
1 Tbsp. dried thyme
1 Tbsp.  dried oregano
Sea salt and freshly ground pepper to taste.

Heat oven to 400 degrees (You can also do these on the grill if you have a rack that will keep potatoes from falling though.  Make sure you oil the rack well with olive oil.)
Cut potatoes into planks.  Lay in a lightly greased 9" x 11" baking pan.
Pour olive oil over potatoes. Add seasonings and toss until potatoes are coated evenly.
Bake 30 to 40 minutes depending on the size of your planks.
