Almost Famous Garden Salad Dressing



This recipe came from the June/July 2009 issue of Food Network Magazine. It's a close copy of the salad dressing that Olive Garden serves.  I made this recipe this afternoon for tomorrow.  We got fresh lettuce and spinach at the farmers market today.

Almost-Famous Garden Salad

1/4 cup extra virgin olive oil
2 Tbsp. white wine vinegar (I used red wine vinegar because that is what I had.)
3 Tbsp. Miracle Whip  (I used mayo.)
1 Tbsp. lemon juice (Fresh squeezed is best but bottled will do.)
2 Tbsp. grated Parmesan cheese
1/4 tsp. garlic salt
1/2 tsp. dried Italian seasoning

Combine all the dressing ingredients and 1 to 2 Tbsp. water in a blender or food processor; puree until smooth.
Place salad blend in a large bowl.  (Blend can include an American Salad blend mix, red onion, thinly sliced, pepperoncini, tomato, black olives, croutons and grated Parmesan cheese.)
Drizzle with dressing.
