Honey Grilled Chicken Breasts
Finally, back to tackling my recipe to-try folder. I've got 1/2 of a chicken marinading now.
Honey-Grilled Chicken Breasts
1/2 cup orange juice
1/3 cup honey
1/4 cup lemon juice
1/4 cup low-sodium soy sauce
2 Tbsp. minced fresh ginger
2 cloves garlic, minced
1/4 tsp. red pepper flakes
In a small bowl, combine the ingredients listed above.
Cover chicken with some or all of the marinade. Refrigerate 8 hours or overnight.
You can reserve some of the marinade to use as a glaze which chicken is grilling if you wish. Remember that any liquid that has been used as a marinade for raw meat needs to be brought to a boil and simmered before using. Reserving it in advance eliminates this step.
Coat grill with cooking spray before starting. Drain chicken and discard marinade.
Grill covered over medium heat until juices run clear. Baste with reserved marinade, if you wish.
My husband, the grill master, keeps our barbecue in the garage. We grill all year round. We just open the door and bring the grill close to the opening but protected from the rain.
