Valley Farms Baked Oatmeal
This recipe came from a make-ahead cook book called Sleep on It by Carol Gordon. It features recipes from Bed and Breakfast Inns. This recipe is from the Inn at Valley Farms B & B in Walpole, New Hampshire. You can find out more about the inn at:

We tried this recipe over the weekend and found that it isn't overly sweet which is good and it's very filling.
Valley Farms Baked Oatmeal
2 1/2 cup quick or regular oats
1/3 cup raisins
1/3 cup chopped walnuts (optional)
1 apple, peeled, cored and grated
1 1/2 tsp. baking powder
1/2 tsp ground cinnamon (I used 1 tsp.)
1/2 tsp. vanilla
dash of salt
1 1/4 cup milk, plus additional for serving
2 large eggs, beaten
1/4 cup honey
In a large bowl, mix the oats, raisins, walnuts and apples.
Add the baking powder, cinnamon, vanilla, salt, 1 1/4 cup milk, eggs and honey.
Mix well and pour into a 8" x 8" ungreased pan. (Next time I might grease the pan with butter to make it easier to clean.)
Cover and refrigerate overnight.
Remove pan from refrigerator and allow to set at room temperature for 30 minutes.
Preheat oven to 350 degrees.
Bake oatmeal for 30 to 40 minutes until lightly golden brown. Do not overbake
Serve with milk, half and half, fruit compote, or maple syrup
