Slow Cooker Thyme and Garlic Chicken Breasts
This is an easy slow cooker recipe that we tried and enjoyed.
Thyme and Garlic Chicken Breasts
6 cloves garlic, minced
1 1/2 tsp. dried thyme, crushed
3 to 4 pounds chicken breasts (I use boneless and skinless)
1/2 cup orange juice (fresh squeezed is ideal but ready made will do.)
1 Tbsp. Balsamic vinegar
salt and pepper to taste
Place chicken in slow cooker. (3 to 5 quart size)
Sprinkle garlic and thyme over chicken.
In small bowl, stir together orange juice and balsamic vinegar. Pour over chicken.
Cover and cook on low heat setting for 5 to 6 hours, 2 1/2 to 3 hours on high heat setting.
Remove chicken. Skim off any fat on liquid. Strain into a saucepan.
Bring to boil. Reduce heat and boil gently, uncovered for about 10 minutes or until
reduced to one cup. Pour sauce over chicken breasts to serve.
