Peanut Butter Chocolate Chip Bars
This recipe is from my friend, Karen Nielsen. She brought these to Andy's birthday party last year and is known for treating people at work with her snacks.
Peanut Butter Chocolate Chip Bars
2 eggs or 1/2 cup egg substitute
1/3 cup water
1 cup canned pumpkin
1 Tbsp. vegetable oil
12 oz. bag semisweet chocolate chips
1 box yellow cake mix
1 cup peanut butter
Preheat oven to 375 degrees. Grease and flour a 15" x 9" jelly roll pan.
Combine eggs, water, pumpkin, oil and peanut butter. Stir or whisk together until well blended.
Add half of the cake mix. Stir well
Add remaining cake mix.
Once dry mix is combined add chocolate chips.
Pour in pan and spread out evenly.
Bake 20 minutes or until toothpick inserted in center comes out clean.
