Super Strawberry Bars
This is quick and easy. (I make a large batch in a 9" x 13" baking pan. You can also half the recipe ingredients and make a smaller amount in an 8" x 8" pan.)
2 cup flour
2 cup rolled oats
1 cup butter or margarine, softened (I sometimes cut this down to 3/4 cup.)
2/3 cup light brown sugar
1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 cups strawberry jam
Preheat oven to 350 degrees.
Coat baking pan with shortening or cooking spray.
In a large bowl, mix everything together except the strawberry jam.
Measure out 4 cups of the mixture. Leave the rest in the bowl and set aside.
Take the 4 cups of the mixture and press into bottom of pan.
Using the back of a large spoon, spread the strawberry jam on top of the mixture in the pan. Spread evenly.
Take what's left of the mixture in the bowl and spread it evenly over the top of the strawberry jam. Press down slightly.
Bake for 25 to 30 minutes or until golden brown.
Remove pan from oven and cool for at least 15 minutes before cutting.
Cut into squares.
