Slow Cooker Corned Beef Brisket with Horseradish Sour Cream
The seasoning packets that come with corned beef are often too salty for us. I found this recipe and really love the horseradish sour cream.
Slow Cooker Brisket
1 large sweet onion, sliced
1--3 to 3 1/2 lb. corned beef brisket
3/4 tsp. crushed red pepper flakes
1 cup reduced-sodium chicken broth.
1 Tbsp. Worcestershire sauce
In 5 to 6 quart slow cooker, place onion. Thoroughly rinse beef, discard seasoning packet.
Place beef on onion; sprinkle with red pepper flakes
Mix broth and Worcestershire sauce; pour over beef.
Cook on low heat setting for 8 to 9 hours.
Horseradish Sour Cream
1/2 cup sour cream
1 Tbsp. cream-style prepared horseradish
2 Tbsp. chopped fresh parsley (I often use 2 tsp. dried parsley flakes instead.)
In small bowl mix sour cream, horseradish and parsley. Serve with beef and onion.
