Raisin Pumpkin Bars
These are fairly simple and perfect for fall.
Raisin Pumpkin Bars
2 cups all-purpose flour
2 cups sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. cloves
1 cup oil
4 eggs
1-15 oz. can (2 cups) pumpkin
1/2 cup chopped nuts
1/2 cup raisins
Frosting:
1/3 cup margarine or butter softened
3 oz. cream cheese softened
2 cups powdered sugar
1 Tbsp. milk
1 tsp. vanilla
Heat oven to 350 degrees.
Grease 15" x 10" x 1" baking pan.
In a large bowl combine all bar ingredients except. nuts and raisins.
Beat at low speed until moistened.
Beat 2 minutes at medium speed.
Stir in nuts and raisins.
Pour into greased pan.
Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.
Cool completely.
FROSTING:
In a small bowl, combine all the frosting ingredients.
Beat until smooth.
Frost cooled bars.
Store in refrigerator.
Makes 48 bars. Can also make a pumpkin cake in a 13" x 9" pan and bake for 40 to 50 minutes.
I often substitute chocolate chips for the raisins and nuts since my family like them better.
