Favorite Pancakes: Before and After

1 cup wheat flour
1/2 cup all-purpose flour
4 tsp. baking powder
4 tsp. sugar
2 eggs, beaten
1 cup yogurt (flavored works great. If you use plain yogurt add about 1 tsp. vanilla.)
1 cup plus of water until it's the consistency you like in pancake batter.
2 Tbsp. vegetable oil

Fresh or frozen blueberries can be added to batter. Can also add mini chocolate chips but it makes a very rich pancake and not too good for those watching blood sugar.

Mix the dry ingredients in medium bowl. Blend well and leave well in center. Beat the 2 eggs in a separate cup and add to the center of the dry mixture. Add yogurt and enough water to give you the consistency you desire. (if you add too much water just add a bit more flour.)

Add the vegetable oil last. Stir well and make pancakes.

I like to serve these with lightly sweetened, thickened fruit. I used 2 cups fresh blueberries,1/2 cup sugar and 1/2 cup water in saucepan over medium heat. I put 2 Tbsp. cornstarch in a separate cup with several Tbsp of water and stirred well. Once blueberries begin to boil, I take several Tbsp. of the hot juice and add it to the cornstarch mixture and stir well. Then add to the blueberries and stir constantly. Bring to a boil. The cornstarch will thicken quickly and soon turn a nice berrilicous color. Can serve with frozen whipped topping or sweetened sour cream.

  1. Oooo, this recipe looks soo good! I made some banana pancakes last week that were pretty tasty. It was just a simple pancake recipe with smashed bananas though—I've never made pancakes with yogurt. I'm gonna have to try it out!
