Carol's "Crabby" Patties-- (Tuna patties)
I had to call these crabby patties so I can hear the voice of Plankton's computer wife, Karen (from SpongeBob) say it. . . Craaabby Pattiees.)
2- 6 oz cans tuna, drained and flaked
1 egg beaten
3/4 to 1 cup soft bread crumbs
1 clove garlic, peeled and minced
2 Tbsp. green onions, sliced thin
2 Tbsp. soy Sauce or tamari
1 Tbsp. Ketchup
1 tsp. sesame oil (could use olive oil too.)
1/2 tsp. black pepper
1/2 cup cornmeal
2 Tbsp. olive oil
1.) In a large bowl, mix tuna, egg, bread crumbs, green onions and garlic.
2.) In small bowl mix soy sauce, ketchup, sesame oil and black pepper.
3.) Lightly spinkle all sides with cornmeal.
4.) Heat oil in medium skillet on medium-high heat. Fry each patty until golden brown on each side.
Tips from my kitchen laboratory: I make soft bread crumbs by putting a slice of bread in the food processor.
These are rather delicate patties. So I cupped some of the cornmeal in my hand and formed the patties on top of it them sprinkled cornmeal generously on the opposite side. When it came time to fry, I slide them off the plate quickly and didn't touch them until them were brown enough on the one side to hold together well.
Served them on buns with sour cream, horseradish, mayo and mustard sauce.
Tried a healthy spicy Asian slaw to accompany the Tuna Patties.
