Balsamic Tomato Chicken Breasts
This is what we had last night for dinner. We were pleased with the flavor and will definitely make it again.
4 chicken breasts halves, boneless, skinless (I used the frozen chicken breasts that come in a bag.
2 Tbsp. olive oil
1/4 cup balsamic vinegar
1-- 15 oz. can diced tomatoes
1 tsp. Italian seasoning
1/8 tsp. red pepper flakes
1/3 cup onion, chopped or diced
2 cloves garlic, minced
salt and pepper to taste
Heat oil in medium skillet over medium high heat.
Add chicken and brown well on both sides.
Add remaining ingredients and simmer 15 to 20 minutes until chicken is thoroughly cooked.
Serve chicken topped with tomato mixture.
Would be good over rice on noodles.
