Strawberry Spinach and Lettuce Salad with Red Onion Dressing
Fresh raw spinach and sliced strawberries are a good pairing in a salad. I lightened the density of the spinach with chopped romaine lettuce. I also added diced cucumber, carrots, cherry tomatoes, celery and freshly grated parmesan cheese. Then adapted a recipe to what I had on hand and came up with this dressing
Red Onion Dressing
3 Tbsp. Sugar
4 Tbsp. Rice Wine Vinegar
3 Tbsp. Olive oil
1 tsp. sesame oil
2 Tbsp. finely minced red onion
1 clove minced garlic
1/4 tsp. salt
1/8 tsp ground pepper
1 1/2 Tbsp. Kewpie Mayonnaise
NOTE: Asian stores typically are the best source for this Japanese-mayo.
You can substitute regular mayo but it's not an even conversion. The Kewpie Mayo is more "liquidy", sweeter and with more egg. I use it for flavor but also because it keeps the oil and vinegar from separating. You can leave it out and stick with a simple oil and vinegar base dressing.
Place all ingredients in a jar with lid or salad dressing container. Blend well. Serve.
Refrigerate any left over dressing. Keeps for a week to 10 days in refrigerator.
