Italian Parmesan Salad Dressing
Photo is from the Strawberry Spinach Salad in the previous post but it was a good photo and so delicious, I'm using it again. Note the different ingredients recommended for an Italian Salad below.
Italian Salad
6 cups salad mix including a variety of types of salad greens
1/4 red onion sliced
8 mild pepperocinis
2-3 diced Roma tomatoes
1 cup sliced black olives
1/4 cup grated parmesan cheese
Croutons
Italian Salad Dressing
1/2 cup olive oil
1/4 cup white vinegar (I used rice wine vinegar)
2 Tbsp. mayonnaise (I used my Kewpie Mayo. Please see yesterday's post for more info.)
2 Tbsp. grated parmesan cheese
1 tsp. lemon juice
1 tsp. sugar
1 clove minced garlic
1 tsp. kosher salt
1/2 tsp. black pepper
1 tsp. dried Italian seasoning (Use fresh basil, oregano, thyme if in season. Note that with the fresh herbs the dressing may have a shorter refrigerator shelf life but the flavor will be worth it.)
Place all ingredients for the dressing in a jar with lid and shake well or use a salad dressing container and blend well.
