Garlic Butter Rice
Needing a side dish and having a bit extra garlic. . .
Went to the grocery store today and there now seems to be a garlic shortage. . .Interesting.
Might it have been this super garlicky dish?!!
If you don't like garlic, you will hate this!
Next time I make this, I might skip toasting the garlic slices for adding in and add other veggies instead. I'm having left over rice with cut up left-over pork roast for lunch.
Garlic Butter Rice
Ingredients
6 cloves garlic, finely sliced
2 Tbsp. Olive Oil
2 1/2 tsp. Garlic minced
3 Tbsp. Butter
1 1/2 cups white medium or long grain rice, uncooked
2 1/2 cups chicken broth
1/2 tsp or more Salt.
1/4- 1/2 tsp. ground pepper.
3-4 green onions thinly sliced.
Directions:
Heat oil in small skillet.
Brown the six garlic slices stirring constantly until browned.
Remove with slotted spoon and let drain on paper towel.
In separate sauce pan/skillet melt 3 Tbsp. butter.
Add 2 1/2 tsp. minced garlic and saute an extra minute.
Add in rice and stir well, coating rice in butter.
Add 2 1/2 cups chicken broth
Salt and pepper to taste.
Cover with lid and let simmer for 12-15 minutes.
Take off heat and let set for 10 minutes.
Fluff rice with fork.
Toss in cut up green onion and fried garlic slices.
