What's on Hand Casserole
I threw this together the other night attempting to create an easy and inexpensive what's-on-hand dish. It could be a great way to use up leftover meat and the seasonings can be adjusted to suit your taste. Next time, I'll use something a bit spicier. . .you could try taco seasoning mix and use a can of diced tomatoes as part of the liquid and omit the soy sauce. . .
Preheat over to 350 degrees.
While oven heats, melt butter or margarine in 9" x 13" baking dish.
1/3 cup butter/margarine/
1 1/2 cup uncooked white rice
Once melted, add the rice to the butter, stir and even out over the bottom of the casserole dish.
Return to oven and "brown" rice a few minutes.
In medium mixing bowl combine the ingredients below:
2 cups chicken broth
1 cup water
1 pkg. dry Stir Fry Seasoning Mix
1 can diced chicken (or leftover meat)
1/4 cup soy sauce.
1- 16 oz bag of frozen stir fry vegetables. (Didn't bother to defrost before adding.)
Gently pour over contents of bowl over rice.
Options: A couple of drops hot chili oil, red pepper flakes.
Bake 40-45 minutes, or until rice has absorbed the liquid.
