Banana Bread


Too many ripe bananas and a need for the comforting smells of something good baking in the oven, proved a perfect reason to make this for snacking and breakfasts.


1 cup sugar
1/3 cup margarine or butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (3-4 medium-size bananas)
1/3 cup water
1 2/3 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1/2 cup white chocolate chips  (optional)
  Can also add chopped nuts, dried cranberries, or. . .

Preheat oven to 350 degrees F.
Grease bottom of loaf pan either an 8 1/2" x 4 1/2" x 2 1/2" or a 9" x 5" x 3"

Cream together sugar and softened butter/margarine.
Add eggs, one at a time and beat well after each addition.
Add bananas and water.  Mix.
Stir in remaining ingredients except for the  chips or nuts, etc.
Stir until just moistened.  Don't over blend.
Add final ingredient.  
Pour into loaf pan.
Bake 55-60 minutes for larger loaf pan or 1 hr. 15 minutes for the smaller pan or until wooden toothpick of strand of dry spaghetti comes out clean.
Cool  5-10 minutes.
Loosen sides and remove from pan.  Place on cooling rack.
Cool completely before slicing.
