Wilted Spinach

Wilted Spinach

1 pkg. tender spinach
2 slices bacon, browned, drained, and crumbled
1 tsp. brown sugar
1 tsp. olive oil
1/2 tsp. red wine vinegar
1/2 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper

Cook bacon first in a deep skillet; drain most of the bacon grease, but leave a little in the pan for the spinach.   Crumble the bacon and set aside.
Toss in the spinach and stirring frequently, wilt the spinach.
In a small bowl, mix the remaining ingredients and when the spinach is wilted, toss on the spinach and mix well.  Add bacon crumbles and remove from heat.  Serve
