Spinach Pear Feta Salad

Carol's back in the kitchen and ready to try new recipes!  I made this last night.  I had it again for lunch today.

Spinach Pear Feta Salad

1 bag spinach
8 oz feta cheese, crumbled
raw sunflower seeds to taste (could substitute chopped walnuts)
canned pears, diced (could substitute mandarin oranges or dried cranberries)
sliced tomatoes

Dressing:

1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
1/4 cup sugar (next time I'm going to try honey or agave nectar and reduce amount of sweetness)
1/4 cup finely minced sweet onion
1 clove garlic, crushed
1/2 tsp. salt
1/2 tsp. dried mustard
dash pepper

Mix dressing together and let refrigerate at least one hour before serving.  Prep salad and serve with dressing.
