Super-Easy Overnight French Toast

I wanted an easy breakfast on Mother's Day morning and tried this recipe.  We're all eager to have it again.

Super-Easy Overnight French Toast

1 large loaf French bread
5 eggs
3/4 cup milk
1/4 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. cinnamon
1-20 oz. bag strawberries and/or raspberries and/or blueberries. 
4 bananas
1 cup sugar

The night before:  Cut the French bread into slices and place in a 9" x 13" baking dish.
Mix together the eggs, milk, baking powder, vanilla and cinnamon and pour over the bread.
Cover and refrigerate over night.

In the morning:  Preheat oven to 400 degrees.
Carefully remove the slices of French bread and transfer them to a plate.
Wash the baking dish and then when dry lightly grease with non-stick cooking spray.

Combine, berries and sugar and thicken.
Add sliced bananas and pour into the bottom of the baking dish.
Top with the soaked French bread.
Then sprinkle cinnamon sugar or a small amount of confectioner's sugar over the top.
Bake for 25 minutes.
Serve with whipped cream or sweetened sour cream.

Note:  I recommend a combination.  I used a pint of frozen blueberries and a pint of fresh strawberries.  I didn't thicken the berries before using them but would thicken them slightly next time I make this.  To thicken I would cook over medium heat.   When the berries are nice and hot,  put 2 tsp. cornstarch in a cup or small bowl and add a small amount cold water.  Stir well.  Take some of the hot berry juice and slowly add a Tbsp. or so to the cornstarch mixture.  Blend well and slowly pour into the hot berries that are still on the stove over medium heat.  Stir gently and bump up heat slightly,  the berries will begin to thicken.  Take off heat when they reach desired consistency and the "cloudy" effect of the added cornstarch has given way to a nice shiny glossy color.  More cornstarch will cause the berries to thicken faster and harder so less is best at first.  This same method is great for thickening berries for toppings for desserts, ice cream, waffles and pancakes.)
