Sweet Potato or Yukon Gold Oven Fries

Apparently Sweet Potato Fries are an acquired taste for some.  I happen to like sweet potatoes so I was fine with these.  They do have a very different texture and taste from regular potatoes so don't expect them to taste like anything other than sweet potatoes and you'll be fine.  You can just as easily use Yukon Gold or regular potatoes.

Sweet Potato or Yukon Gold Oven Fries

2 medium sweet potatoes, scrubbed and peeled, cut into strips.
1/4 to 1/2 tsp. kosher salt
1/4 tsp. paprika
1/4 tsp. garlic powder (I used real crushed garlic over the top of the potatoe strips.)
1/8 tsp. black pepper
olive oil

Preheat oven to 450 degrees
Place potato strips in a 9" x 13" baking pan.
Pour olive oil over potatoes.
Sprinkle with seasonings.
Bake uncovered for 20 minutes or until potatoes are of desired tenderness.
