Black Beans and Brown Rice

While my daugher and I haven't make the leap to being vegan or even vegetarian, I have been making more meatless meals.  I've discovered that some vegan recipes can be very low cost and easy to prepare, like the one below.  We've also discovered that there can be a wide range brown rice.  The one we were buying in the bulk bins at Winco wasn't very good.  We found a brown rice in a vacuum package at the local Asian Market that is very tasty and still fairly inexpensive.

Black Beans and Brown Rice

1-14 to 16 oz can of black beans, drained and rinsed
1- 14-to 16 oz. can of diced tomatoes with chilies, with liquid (I used a can with adobo seasoning)
1 medium onion, diced
1 small sweet pepper, chopped
Additional salt, pepper, hot sauce or chili powder can be added to taste.

Brown rice

Start 2 cups of brown rice in the rice cooker or on the stovetop.
When the rice is near done, saute the onion and pepper in a small amount of olive oil or vegetable broth.
Add the beans and rice and simmer about 10 minutes. 
Add a little more water or liquid if all the tomato juice cooks off.
Serve over rice.
