Cilantro Sesame Dressing
This flavorful dressing is an easy fix and a great compliment to a tossed green salad or bean salad. You can increase or decrease it's consistency by altering the oils or adding a splash or two of rice wine vinegar.
Cilantro Sesame Dressing
1-2 Tbsp. fresh ginger root, peeled and chopped
1/2 cup cilantro, coarsely chopped
1/2 cup green onions or chives coarsely chopped
1/4 cup olive oil
1 garlic clove, peeled and mashed
2 tsp. sesame oil
1/4 to 1/2 tsp. salt
1/4 tsp. pepper.
Put ginger, cilantro, green onion or chives, garlic clove, salt and pepper into bowl of small food processor. With processor running, add the olive oil slowly through the chute.
Finally add the sesame oil with the food processor running.
Refrigerator several hours prior to using to let the flavors "marry".
Serve on tossed green salad, bean salad or as "dressing" for wraps, tacos or burritos.
