Southern Cornmeal Bread for the Bread Machine
This makes a better toast than a sandwich bread in our house. Great with butter and jam.
Southern Cornmeal Bread
1 cup water
1 egg
1/4 cup nonfat dry milk
1 1/2 tsp. salt
2 Tbsp. liquid honey
2 Tbsp. shortening or vegetable oil
3 1/2 cups bread flour
1/2 cup cornmeal
1 tsp. bread machine yeast
Place ingredients into bread pan in the manner recommended by the bread machine manufacturer.
Use the sweet cycle to bake.
Note: The original recipe listed 2 3/4 cup flour but the dough was way to sticky so I kept adding in more flour which it began stirring to get the right consistency. It was also a rainy day in the Pacific Northwest. Weather conditions will make a big difference in how bread turns out and what needs to be "tweaked" to get the best finished product. I usually have to add more dry ingredients when making bread here in Vancouver, WA. When I lived in Southern California, I never had to add more flour.
