Slow Cooker Taco Soup
This recipe is so easy, I'm almost embarrassed to include it. It makes a quick and easy meal at the end of a busy day and makes the house smell wonderful.
This makes a lot of soup, so you'll need a larger slow cooker. You could also use a large Dutch oven or stock pot and simmer it on the stove for an hour or two.
Slow Cooker Taco Soup
1 lb. ground beef
1 onion, chopped
1-16 oz. can chili beans, with liquid
1-16 oz can kidney beans, with liquid
1-15 oz. can whole kernel corn, with liquid
1-8 oz. can tomato sauce
2 cups water
2-14.5 oz. cans peeled and diced tomatoes
1- 4oz. can of diced green chilies, optional
1-1.25 oz. package taco seasoning
In a medium skillet, cook the ground beef until browned over medium heat. Drain and set aside.
Saute the onions in same skillet.
Put beef and onion in slow cooker.
Add all the remaining ingredients. Do not drain liquid from cans.
Mix to blend
Cook on low for 6 to 8 hours.
