Orange Balsamic Marinade
Needing something quick for dinner last night, I created this recipe so that I could steam a chicken in my pressure cooker. My family was a fan and I realized that if I used this as a marinade, I would have given the chicken even more flavor.
Orange Balsamic Marinade
for poultry
1/4 cup Dijon mustard
1/2 cup orange juice
1/4 cup balsamic vinegar
1 clove garlic crushed
1 tsp dried thyme
1/2 tsp. sage
1/4 tsp. red pepper flakes
1 Tbsp. honey
salt and pepper to taste.
Blend all ingredients together and mix well.
Marinade overnight or at least 8 hours before preparing.
(I added about 1/2 cup water to this sauce for cooking in the pressure cooker. I would eliminate that when using as a marinade.)
