Baked Oatmeal Pudding

This is in the oven right now.  I'm baking it today, on a Sunday,so I can just reheat it for breakfast the next few days.  I'll add milk and reheat in the microwave.

Baked Oatmeal Pudding

1 cup fat-free milk
2 eggs
2 Tbsps. extra virgin olive oil
1/3 cup packed brown sugar
1 tsp. ground cinnamon
1 1/2 cup old-fashioned oats
1 1/4 tsp. baking powder
1/4 tsp. salt
1/4 cup chopped nuts
1/4 cup dried cranberries or cherries
1 firm,ripe apple or pears chopped.
1/2 cup fresh or frozen blueberries (optional)

Preheat oven to 325 degrees.
Coat a 8" square baking pan with non-stick cooking spray.
In a large bowl, whisk together milk, eggs, oil, sugar and cinnamon.
Stir in the oats, baking powder, salt, nuts, dried fruit and apple or pear.
Stir until just blended.
Pour into prepared pan. Bake for 25 to 30 minutes or until liquid is absorbed and top is a light golden brown.
Spoon into bowls.  Top with blueberries (optional) and serve with milk.
