Sugared Peanuts
Wanting to try a sugared nut recipe, I found this in the April/May 2008 "Taste of Home" Magazine. They were a hit.
Sugared Peanuts
5 cups unsalted peanuts
1 cup sugar
1 cup water
1/4 tsp. salt
Preheat oven to 300 degrees.
In a large, heavy saucepan, combine the peanuts, sugar and water.
Bring to a boil; cook until syrup has evaporated about 10 minutes.
(Watch constantly, stir often. Sugar burns fast.)
Spread peanuts in a single layer in a greased 15" x 10" x 1" baking pan;
Sprinkle with salt.
Bake for 30 to 35 minutes or until dry and lightly browned.
Cool completely.
Store in an airtight container.
Yield 5 cups.
(I added cinnamon to the sugar.)
