Scallion Tilapia

One day I picked up this recipe at Safeway.  I finally tried it the other night on some frozen tilapia.  I usually hate frozen fish but this was different.  The topping really enhanced the good flavor of the fish and I'll definitely make this again.

Scallion Tilapia

4--6 oz. tilapia filets
1 Tbsp. plus 1 tsp. olive oil, divided
1/2 cup chopped red bell pepper
1 1/4 tsp. peeled, grated ginger root or 1/8 tsp. ground ginger
2 green onions, cut into pieces 2-inch long (I used diced yellow onion instead.)
2 Tbsp. soy sauce
2 tsp. seasoned rice vinegar
2 tsp. dark sesame oil.

Place oven rack 6 inches from heat source and preheat broiler.
Rub both sides of fillets with 1 Tbsp. of the oil; season with salt and pepper to taste. Set aside.
Meanwhile in large skillet, heat remaining 1 tsp. oil over medium heat. Add bell pepper and ginger; cook until tender.  Add green onion cook 30 seconds; (If using yellow onion saute with pepper and ginger.) remove from heat.
Stir in soy sauce, vinegar and sesame oil.
Place broiler pan under heat source; heat 2 minutes.
Place fillets on hot broiler pan; broil 4 minutes or until fish flakes easily with fork.
Top fillets with ginger-scallion topping and serve.
