Guacamole

Patti O. told me about a recipe for guacamole that used a green pepper.  I came across this recipe in an old cookbook and finally gave it a try. I liked it.  I might make it spicier next time by adding some Jalapeno or Serrano pepper.  You could also add some diced tomatoes after it was blended to bump up the color and add flavor.  I will definitely make it again.

Guacamole

2 very ripe avocados
2 Tbsp. onion
1 tsp. salt
1 green pepper chopped fine
lemon juice to taste  (I used lime)

In a food processor, I combined all the ingredients until it was the desired consistency.
You'll have to stop and scrape the sides of the food processor bowl at least once or twice.
Keep in a covered jar or non-reactive container.
Can be used as a spread of as a dip.
