El Pollo Loco Pollo Asado
This marinade is actually quite close to the flavor of El Pollo Loco's chicken. We enjoyed it with the bean recipe that I've also entered today.
El Pollo Loco Pollo Asado
Marinade
1 cup white vinegar
1 cup olive oil (I used slightly less oil. . . closer to 2/3 or 3/4 cup.)
1/2 cup white wine (Didn't have, so I just added a bit of water.)
pinch of dried oregano
pinch of dried thyme
pinch of salt
2 cloves garlic, minced
1 1/2 tsp. Tabasco sauce
Whole chicken cut into 8 pieces. (I used 2 large chicken breasts, bone in and skin on.)
Mix together all but the chicken. Add chicken and marinate overnight. Grill slowly until done.
Serve with rice and beans.
