Creamy Caesar Salad Dressing

The hot weather is making me hungry for salad.  This is Pampered Chef dressing recipe minus the egg and anchovies found in traditional Caesar Salad Dressing. 

Creamy Caesar Salad Dressing

1 lemon
3/4 tsp. Worcestershire sauce
3/4 tsp. Dijon mustard
1/2 tsp. coarsely ground black pepper
1 large garlic clove, pressed
1/4 cup mayonnaise
1/2 cup olive oil
1/4 cup grated fresh Parmesan cheese

Juice lemon to measure 2 tablespoons juice; place in small bowl.
Add Worcestershire sauce, mustard, black pepper and garlic; whisk until blended.
Add mayonnaise; whisk until smooth.
While continually whisking; add oil to mayonnaise mixture in a thin, steady stream.
Continue whisking until blended; stir in Parmesan cheese.
Cover; refrigerate until ready to serve.
Store dressing covered in refrigerator up to 2 weeks.

Yield 1 cup.

You can reduce the fat content in this recipe by using lower fat mayonnaise.
