Melt-in-Your Mouth Blueberry Cake
It's blueberry season! I found this recipe on line at Allrecipes.com. I pulled it out of the oven about 20 minutes ago and we just tasted it served with vanilla ice cream. Yum! It's a winner.
Melt-In-Your-Mouth Blueberry Cake
1/2 cup butter
1/2 cup white sugar
1/4 tsp. salt
1 tsp. vanilla
2 egg yolks
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/3 cup milk
2 egg whites
1/4 cup white sugar
1 1/2 cups fresh blueberries
1 Tbsp. all-purpose flour
1 Tbsp. white sugar
Preheat oven to 350 degrees. Grease and flour an 8-inch square pan.
Cream butter with 1/2 cup sugar until fluffy.
Add salt and vanilla. Stir.
Separate eggs and reserve the whites. Add the egg yolks to the sugar mixture and beat until creamy.
Combine 1 1/2 cups flour and baking powder; add alternately with the 1/3 cup milk to the sugar and egg yolk mixture.
Coat the blueberries with 1 Tbsp. flour; add to batter.
In a separate mixing bowl, beat the egg whites until soft peaks form. Add the 1/4 cup sugar to the whites, one Tablespoon at a time, and beat until stiff peaks form.
Fold egg whites into batter.
Pour into a prepared pan.
Sprinkle top with remaining 1 tablespoon sugar
Bake for 50 minutes or until the cake tests done.
