Greek Salad

The feta cheese in my refrigerator is calling me to make this. 

Greek Salad

5 cups bite-sized pieces spinach (I often substitute iceberg lettuce.)
4 cups bite-sized pieces leaf lettuce
1/2 cup feta cheese
1/4 cup sliced green onions
24 pitted ripe olives, whole or sliced
3 tomatoes, cut into wedges
1 cucumber, sliced

Toss ingredients.

Lemon Dressing

1/4 cup vegetable oil
2 Tbsp. lemon juice
1/2 tsp. sugar
1 1/2 tsp. Dijon-style mustard
1/4 tsp. salt
1/8 tsp. pepper.

Shake dressing ingredients in tightly covered container.
Pour over salad and toss.
Serve
