Sweet Red Beans and Rice

This is a budget saving recipe that I used to make quite often.  You can alter this recipe to suit your own tastes.  It's a bit on the sweet side and if I were to make it again, I'd cut the sugar.  The sweetness does make it easier to use ground turkey or chicken since it helps cover the ground turkey taste.  I also make it with ground beef.

Sweet Red Beans and Rice

1 1/2 lbs. ground beef or turkey
1 medium onion, diced
2 cloves garlic, minced
2 cans kidney beans
2 cans diced tomatoes (you can use tomatoes with chilis added if you like things spicy.)
1/2 cup brown sugar packed
1/2 cup catsup
1-2 Tbsp. rice or balsamic vinegar
2-3 tsp. chili powder
1 Tbsp. prepared mustard
1 small can diced green chilis, optional

Brown ground beef or turkey. 
Saute onion and garlic for a few minutes after meat is thoroughly browned.
Place in 4 quart slow cooker.
Add beans, tomatoes and remaining ingredients.
Stir well and heat for at least 3 hours on low.
Serve over hot rice.
