Summer Potato Salad
This is an old-fashioned recipe and uses ingredients that I associate with the potato salads of childhood summers. I make it often during the summer months.
Summer Potato Salad
4-5 cups diced cooked potatoes
1 cup sliced celery
1/2 to 1 cup grated carrot, optional
1/4 cup onion, finely chopped
1/2 cup mayonaisse
1/2 cup sour cream
1/4 cup sweet relish
1 Tbsp. horseradish
Salt and pepper to taste
Cook the potatoes and dice into bite-size pieces. Add the celery, grated carrot and onion.
In a small bowl, blend mayo, sour cream, relish and horseradish.
I usually add 1 tsp. salt and 1/2 tsp. pepper to this mixture before mixing.
Blend the sauce with the potatoes and veggies.
Refrigerate until well chilled before serving.
