Steam Cake (Puto)

Our home in Chula Vista, was near my husband's aunt, Yoshi.  Yoshi is an excellent cook and she is one of the biggest things I miss about southern California.  Japanese and Okinawan cooking has very little baking in it since few traditional Japanese homes had ovens like we do in the states.  She shared a recipe for a simple, but tasty steam cake. It's "baked" in a bamboo steamer over boiling water.  I could never quite achieve the same quality that Auntie Yoshi does but it is fun to make and a way that my children can enjoy some of their Okinawan heritage.

Steam Cake (Puto)

1 1/2 cups self-rising flour
1 cup milk
1/2 cup sugar
2 eggs
1 tsp. mayonaisse
1 tsp. vanilla

In medium mixing bowl, beat the two eggs until well blended.
Add sugar, milk, mayo, vanilla and flour and beat 2 minutes on medium speed until smooth.
Pour into 9" pie pan. that has been lightly greased and floured.
Steam 20 to 25 minutes until done and has a spongy cake consistency.
