Chewy Banana Oat Cookies
My daughter, Shannon and I made these cookies yesterday. They were a delightful surprise. There is no added sugar in the recipe other than the natural sweetness of the banana and it's enough. This makes a small batch so I'll double this recipe when I made it again. Instead of ripe bananas, the recipe says you can also use mashed sweet potato or acorn squash.
Chewy Banana Oat Cookies
1 1/2 cups quick oats
1/2 cup whole wheat flour
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. ground cinnamon
2 Tbsp. chopped nuts or raisins (I used chocolate chips instead and more than just 2 Tbsp.)
2 medium bananas, mashed (about 1 cup)
1/4 cup vegetable oil plus 2 Tbsp.
Preheat oven to 350 degrees.
Mix dry ingredients together.
In a separate bowl, mix mashed banana and oil.
Add banana and oil to dry ingredients. Blend well
Add nuts, raisins or chocolate chips and mix well.
Drop by heating Tablespoon on ungreased cookie sheet.
Bake 10 to 15 minutes
Cool on rack.
