Slow Cooker Chicken Broth

I've often made chicken broth in the slow cooker. Yesterday, I tried a slightly different recipe. I plan on making Chicken Enchiladas with Green Sauce on Tuesday.

Slow Cooker Chicken Broth

1 small onion
2 carrots, peeled & chopped in to large pieces
2 stalks celery & leaves chopped in to large pieces
1 bay leaf
4 sprigs parsley (I used about 1 Tbsp. parsley flakes)
6 black peppercorns
1/4 c dry white wine (I used cooking sherry)
2 lbs chicken with skin/removed (I left the skin on and am chilling the broth so I can skim off the fat that solidifies at the top.)
4 1/2 cups water

salt to taste

This requires a larger slow cooker about 5 quart since you need to fill the slow cooker no more than 2/3 full to insure that it will cook the chicken properly.

Place all the ingredients except water into slow cooker. Add just enough water to cover.

The 4 1/2 cups of water didn't cover the chicken for me but I used it anyway. I'd recommend turning the chicken over half way through the cooking time or you could also cut up the chicken before using so it fits better in your slow cooker. If cutting up the chicken, first shorten your cooking time. Chicken is done with it falls off the bone easily.

Use high setting until it almost comes to a boil, then reduce heat to low. Allow to simmer overnight or up to 16 hours.

Note: This long cooking time may be too much for you. It depends on your slow cooker. I left it cook overnight and the meat was too tender and some of the dark meat was actually grainy. For me and my slow cooker, the ideal cooking time is closer to 6 to 8 hours.

Remove chicken pieces and strain. Toss veggies. Put broth in container. Chill. Removed hardened fat.

Freeze in ice cube trays or freezer cartons. The ice-cube size frozen chicken broth nuggets are great for tossing into skillets or sauces quickly. Once frozen, empty trays and freeze in plastic bags.

Note: I have several garage sale ice cube trays that I use especially for chicken broth and tomato sauce cubes. If you measure how much liquid will fit into each cube, you'll know exactly what you're adding to future recipes when you use the cubes.
