Lemon Squares
Here's another spring-time recipe. My daughter and I attended a mother and daughter event with a friend and they served Lemon Squares. My daughter was eager to make them the next day. I supplied the ingredients and the kitchen and asked her to double the recipe. We all enjoyed the results. The recipe below is the recipe doubled.
Lemon Squares
2 cups all-purpose flour
1 cup margarine or butter, softened
1/2 cup powdered sugar
4 eggs
2 cups granulated sugar
4 tsp. grated lemon peel
4 Tbsp. lemon juice
1 tsp. baking powder
1/2 tsp. salt.
Heat oven to 350 degrees.
Mix flour, margarine/butter and powdered sugar.
Press in ungreased 9" x 13" pan, building up 1/2-inch edges.
Bake 20 minutes.
Beat remaining ingredients until light and fluffy, about 3 minutes
Pour over hot crust.
Bake until no indentation remains when lightly touched in center, about 25 minutes. Cool
Cut into squares.
Lemon-Coconut Squares: Stir in 1 cup flaked coconut into egg mixture.
