Frozen Dinner Rolls

You can make your own make-ahead freezer rolls avoid the preservatives and still have the convenience.

Frozen Dinner Rolls

5 1/2 to 6 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 tsp. salt
2 pkgs. active dry yeast
1 1/4 cup water
1/3 cup margarine or butter
2 large eggs

In large bowl, thoroughly mix 2 cups flour, sugar, salt and yeast.
Combine water, milk and margarine or butter in a saucepan.
Heat until 120 to 130 degrees F. Margarine/butter does not need to melt.
Gradually add to dry ingredients and beat 2 minutes at medium speed with electric mixer, scrapping the bowl occasionally.
Add eggs and 1/2 cup flour. Beat at high speed for 2 minutes.
Stir in enough additional flour to make soft dough.
Turn out on lightly flour surface and knead until smooth and elastic about 8 to 10 minutes.
Cover with plastic wrap, then towel and let rest 20 minutes.
Punch down dough again and shape into desired shapes for rolls. Place on greased baking sheets. Cover with plastic and foil, sealing well and flash freeze.
Once they are frozen, transfer to bags.
Remove from freezer. Cover. Let rise in warm place, free from drafts until doubled in size. (Usually about 1 1/2 hours)
Bake at 350 degrees for 15 minutes or until golden brown.
Serve.
