Tasty Chicken Strips with Honey Peanut Dip
The honey peanut dip is a real hit with the kids.
Tasty Chicken Strips with Honey Peanut Dip
(This was the original marinade recipe from Sue Bee Honey. It's way too sweet and has too much butter in it for me. . . although it does sound wonderful. I cut the honey down to 1/4 cup or less and instead of butter use a Tbsp. of olive oil in the marinade.)
2 boneless, skinless chicken breasts cut into thin strips
Marinade:
1 cup honey (I'd use 1/4 cup.)
1 stick butter (1/2 cup) (I'd use 1 Tbsp. Olive oil)
1 Tbsp. Worcestershire sauce
1/4 cup lower sodium soy sauce
1 tsp. lime juice
1/3 cup balsamic vinegar
1 Tbsp. horseradish
Mix all of the ingredients for the marinade together in a bowl. Place breast strips in the marinade and let stand for at least 1 hour.
Grill strips until done or lightly brown on each side.
Remove from heat and serve with honey peanut dip
Honey Peanut Dip
1/4 cup honey
1/2 cup peanut butter
1/4 cup rice vinegar
3 Tbsp. lower sodium soy sauce
1 tsp. jalapeno pepper, minced (optional) I often use about 1/8 tsp to 1/4 tsp. red pepper flakes instead.
1 tsp. garlic
1 tsp. fresh ginger grated.
Combine all ingredients, mix until well blended
