Pork Chops with Honey and Garlic

We've been hungry so to avoid diet failure, I've eased up on my adherence to the South Beach Diet. We both have some blood sugar issues and find getting too hungry and big problem. We're snacking on string cheese and still focused on cutting out sweets and night-time snacking so we're making progress! (I'll still use the recipes from South Beach and use it as a general guideline.) I made this last night and served it with some Oven Roasted Potatoes and green beans. The honey may not fit the South Beach Diet plan in Phase One but it did satisfy some of my hunger cravings.

Pork Chops with Honey and Garlic


4 center loin chops
1/4 cup honey
1/4 cup lemon juice
2 Tbsp. soy sauce
1 garlic clove minced

Heat large skillet over medium-high heat. Place small amount of olive oil in skillet and brown pork chops on both sides . . about 1 minute.
Reduce heat to medium and cook about until done. (This should take less then 20 minutes total and turn over the chops about halfway through the cooking time.)
Meanwhile in small bowl, stir together remaining ingredients and set aside.
Remove chops from skillet when they are done. Keep warm
Add honey mix to skillet. Cook about 3 minutes stirring occasionally.
Return chops to pan and serve. Pour some of the sauce over the chops.
