Beef Charlemagne and the Final Countdown
This is the 90th recipe I've entered. I'm on the way to 100!!!
This recipe is one I fashioned after a recipe I saw on a Katie Brown show on Lifetime at least 10 years ago.
Beef Charlemagne
1 1/2 lbs. lean carne asada beef
1 bunch fresh spinach (You can use frozen but be sure to drain out most of the water.)
2 cloves garlic
1/3 cup parmesan cheese
1/4 cup olive oil
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried rosemary
1/2 tsp. dried thyme.
If using fresh spinach, wilt it in a skillet with a little olive oil.
Place spinach in food processor, add parmesan and 2 cloves garlic. Chop
While chopping, drizzle in olive oil slowly until it's all well combined.
Made a rub from the dry ingredients and rub on one side of the carne asada meat.
Coat the other side of the meat with the spinach/parmesan mix.
Roll up and fasten with kitchen string or toothpicks.
Sear outside of rolls in skillet. Place in baking sheet
Bake in a 375 degree oven for 30 to 40 minutes.
Serve
You can also prepare these on a grill.
