Tina's Bake Sale Extravaganza Caramels

Finally watched Julie and Julia last night and was inspired to get back at recipe blogging. Today I'm sharing a wonderful caramel recipe that comes from my dear ex-supervisor, Tina. We made them last year at Christmas time and am eager to make them again this weekend. Tina says that caramels can be difficult to make but she's never had trouble with this recipe. I concur. They turned out soft and wonderfully chewy!

2 cups white sugar
1 cup packed brown sugar
1 cup white corn syrup
1 cup evaporated milk
2 cups heavy whipping cream
1 cup butter
1 1/4 tsp. vanilla

Grease 9" x 13" pan.

In medium saucepan, combine sugar, brown sugar, corn syrup, evaporated milk, whipping cream and butter.
Monitor the heat with a candy thermometer while stirring.
At 250 degrees remove from heat and stir in vanilla.
Pour into prepared pan and let cool completely.
When cooled cut into small squares and wrap in candy wrappers or small pieces of waxed paper.

(We all had so much fun wrapping and tasting caramels last year as we all sat around the kitchen table.)
