Pistachio Ambrosia

My Grandma Laux made this dessert/salad often for Christmas and Thanksgiving. It's very easy and popular with the kids.

Pistachio Ambrosia

1 small package instant pistachio pudding
1 -- 16 oz can chunk pineapple
1 -- 8 oz can crushed pineapple
1 -- 16 oz container non-dairy frozen dessert topping (defrosted in refrigerator.)
1 cup mini marshmallows

Drain juice from pineapple. (We save the juice and add it to soda or smoothies.)
Place pineapple in a bowl and sprinkle pudding mix over the top.
Let stand for about 3 minutes
Blend in whipped topping and marshmallows.
Stir well and chill for at least 2 hours.
