Microwave Fantasy Fudge

We've tried other recipes for fudge but always come back to this simple standard that you can find printed on the label of Kraft's Marshmallow Creme. Our neighbor in California thought we'd purchased the fudge from a candy shop. Miss S. and I just finished making some for our current neighbors.

Microwave Fantasy Fudge

3/4 cup butter
3 cups sugar
1 --5 oz. can evaporated milk (if you can't find the small can, 5 oz from a larger can will do.)
1 -- 12 oz package semi-sweet chocolate pieces. (I often use milk chocolate chips but the finished product is really sweet.)
1 -- 7 oz. jar Marshmallow Creme
1 cup chopped nuts, optional
1 tsp. vanilla

Microwave butter in a 4 qt. bowl on high for 1 minute or until melted. (You'll want to make sure your bowl is deep enough. As you microwave, the butter and sugar mix will rise and spill over the edge if your bowl is too shallow.)

Add sugar and milk and mix well.

Microwave on HIGH for 3 minutes. Stir well.
Microwave 2 minutes. Stir well.
Microwave 3 minutes. Stir well.
Microwave 2 1/2 minutes. Stir.

Add marshmallow creme, 1 tsp. vanilla and chocolate chips. Stir well until all ingredients are well blended.

Pour into a 9" x 13" pan that has been coated with butter. Spread out evenly, let cool at room temperature and cut into squares.
Makes 3 lbs. of fudge.

(We end up refrigerating this before cutting it but this year, I'm going to cut when it's room temp. I bet it'll be easier than when it's cold and solid.)
